Comtesse Du Barry Block of Goose Foie Gras and Chutney
Invented by Comtesse du Barry in 1954, this process consists of mixing several goose foie gras before cooking. It has the advantage of limiting the amount of fat released during cooking. The result is an equal foie gras quality and offers a beautiful presentation and smooth cut. Farm raised goose from South West France and always prepared in their kitchens in Gimont; they highlight the best of local produce. A delicious dish that harmoniously mixes goose foie gras and fig chutney.
