Until recently, naga bhut jolokia chili - held the title as the hottest pepper in the world. It is a dangerously hot ingredient, which should be used with caution.

In fact, naga bhut jolokia chili powder is used as tear gas in India, and ranks over one million units on the Scoville Scale of chili heat – ten times hotter than scotch bonnets. The chilies are mainly grown in Bangladesh and northeastern Indian states.

We love bhut jolokia chilies because along with their fiery heat they also have intense tropical notes: you’ll be able to smell banana, and perhaps even pineapple. That means they bring a fantastic range of flavors to your cooking.

You can add just one chili to a curry before simmering in the oven for several hours, to give the perfect level of heat - though make sure to remove the whole chili pod before serving. Our delicious recipe for Naga Bhut jolokia lamb rogan josh is the perfect example of this.
