Invented in 1954 by Henri Lacroix, son-in-law of the founders of Comtesse du Barry is an exceptional-quality foie gras presented beautifully and prepared in their kitchens in Gimont. The block of duck foie gras is a mixture of several high-quality livers which after preparation are finely crushed and emulsified.
